Easy Peasy Flop-Proof Boiled Milk Cake Recipe


I am sharing this recipe today, especially for my self-confessed baking novice of a dear friend Charmaine. This cake is seriously simple to make, and virtually flop-proof. I originally received the recipe as an email from my ex-mother-in-law, however I lost it when my computer crashed and had to do some serious digging on the internet to find it again. This is a combination of a few recipes I found, with my own twist - and it tastes even better!

Old-fashioned Boiled Milk Cake





Preheat the oven to 180°C

Equipment you will need: 

Cake pan - greased
2 mixing bowl
Saucepan
Electric mixer

Ingredients:

2 cups flour
1 cup milk
4 eggs
2 cups sugar
250g butter
1 teaspoon vanilla
1 teaspoon baking powder
pinch of salt


Method:


Sift flour, salt and baking powder into one mixing bowl and set aside. Cream eggs and sugar with the electric mixer in another mixing bowl and add to flour mixture.

Bring milk to the boil and then very slowly add to the flour mixture along with the vanilla.

Pour into prepared cake pan and bake for 45 to 55min until you can stick a knife in the middle and it comes out clean.

Ice with your favourite version of icing, or with a tin of caramel treat, yum!

Make it Chocolate! 
Substitute half the flour for cocoa powder, although this does make a slightly firmer, less moist cake. I always make this into a chocolate cake, and its worked well so far.
